Test #2: Gummy bears under vacuum
Explanation
As it turns out, gummy bears do not have much of a reaction under vacuum. Well, not unless heat is added! Once we had our AccuTemp vacuum oven running some heat, the fun began. As the sugar, starch, citric acid, and gelatin began to break down, we saw big changes taking place.
By carefully adjusting the vacuum levels, we could manipulate the texture of the gummy bear. This was done much in the same way that extraction artists are able to manipulate cannabis concentrates into wax, shatter, crumble, etcetera. All it takes is some trial and error! 😉
